Saoji Mutton, one of Nagpur’s most distinctive culinary signatures, carries the story of a community that had to reinvent itself, turning upheaval and lost livelihoods into a food tradition that would endure for generations. Fiery, dark and deeply aromatic, the curry is associated with the Halba Koshti and Savji weaving communities, who migrated from Madhya Pradesh to Nagpur in the 19th century.
